Reader Restaurant Awards' Big Personalities: Max Levy

This year we initiated the "Restaurant Personality of the Year" category as a nod to some of the people who make Beijing's dining scene what it is. We thought it'd be fun to have these personalities "interview" each other, so we invited each of the 13 nominees to contribute questions, and tossed a few in ourselves for good measure. Here’s what Max Levy of Apothecary/Radio had to say.

If you were a superhero, who would you be?
It has always been Batman. He has no superpowers, only a conscience.

What one item of clothing best sums up your personality?
Socks. For some they’re a necessity, for others they are the key point of the wardrobe.

What inspires you to be innovative amongst such strong competition?
It’s not about being innovative amongst the competition, but pushing yourself to innovate regardless of the surroundings.

What’s the staff meal in your restaurant?
The same food that we serve to customers, so that they learn to appreciate and understand that food. If they like it, than they will serve it well.

What single value do you try to instill in your staff above all others?
Honesty and trust. If this isn’t present, nothing really gets done.
