Steak With a View: New Chef and Menu at Grill 79, China World Summit Wing

Wracking your brain for a place with a dazzling view and a slap-up meal? Grill 79, located on the top floor of the tallest building in Guomao, the China World Summit Wing, presents exactly that one-two winning combo.

The kitchen at China World Summit Wing's 79th-floor Western-style restaurant has just been taken over by Portuguese chef de cuisine Deivid Paiva, who brings with him over 10 years of international culinary experience. The picture above is him being serious in the kitchen, and below, what he might look like while handling a giant fish. The man has range.

We recently tried some of his new dishes set high above Beijing and wholeheartedly approve. The Alaskan king crab salad with caviar (RMB 178), for example, was beautifully laid out, the crab salad itself creamy and a little salty to balance the vegetables. The smooth avocado mousse added further to the creaminess, while the pickled melon played as a palate cleanser for each bite. 

Select from seafood and Australian wagyu beef options for the main course, the former "duo of beef" (RMB 330) is made up of two beef cuts in one dish: slow-cooked wagyu beef cheeks and grilled beef tenderloin, alongside carrot puree, scallions, baby vegetables, and smoked potato, and finished off with a hearty beef jus infused with herbes de Provence. Both cuts were tender to the point of convincing me – someone who isn't a massive red meat eater – to order this dish again without hesitation.

Grill 79 is perfect if you're looking to impress someone (but make sure to call ahead and book a window seat if you really want the night to be memorable, although we make no guarantees about the smog ...). It's also especially recommended to those looking to stock up on protein as the kitchen lists a whole gamut of fine cuts of Australian wagyu with various degrees of age and size.
