Is Beijing's sushi safe?

The US FDA requires that fish to be served raw remain frozen for seven days at a temperature of minus four degrees Fahrenheit (or for 15 hours at a temperature of minus 31 degrees Fahrenheit in a blast freezer).

(By the way, your freezer at home doesn't get cold enough for this.)

Freezing kills any parasitic worms and their larvae that may infect some species of fish (including salmon, herring, and cod) and that can make you pretty sick.

Symptoms of an infection depend on the type of worm, ranging from nausea, cramps, and diarrhea to severe abdominal inflammation and pain that can develop within an hour after eating. Surgery may be necessary to remove one of these parasites, the roundworm Anisakis simplex.

So who's got the lowdown on where Beijing's Japanese restaurants procure their sushi and how they store it? And how about the sanitation prep at popular sushi eateries?

I want to eat raw but I want to eat safe.

AFAIK, sushi made from fish thats been frozen is pretty much safe to consume. it's fresh fish (which I doubt they use in BJs sushi restaurants) that can give you problems.

poor kitchen hygiene will screw things up though and this is where you might encounter problems in BJ: remember all those posts a while back from people getting the squirts after their meals in Hatsune?

I suspect that the fish doesn't meet the US FDA standard. I've had sushi at a number of local restaurants and the only one worth returning to was Hatsune. No hershey squirts for me.

That said, some of the best sushi I've ever had (in Tokyo and in Sydney) probably hadn't been flash frozen either.

Ah, so that's why they put it in the milk... it's starting to make sense now.

I have consumed my share of sushi here in Beijing, have never had any ill effects. You take your chances when ever you eat out, no matter where you are in the world. Find a reputable restaurant here the same way you would at home.

If I'm eating sushi in beijing I only go to one of two places Hatsune or Yotsuba. Yotsuba is hands down the best but the only problem is you have to book 2 weeks in advance to get a table.

yotsuba is so good but it is so expensive, fish daily imported from japan

hatsune has supposedly their fish flewn from norway if i remember well

my advice in this issue : try the beef sushi from red moon

level certificate in their language specialty; English | Japanese |

In addition to freezing, "real" sushi chefs also know what signs to look for in infected meat.

Some parasites can also cause liver damage and increase the risk of developing liver cancer.

I really doubt sushi here is prepared the same way as in the US. While there may be regulations here to that effect, enforcement is a whole other issue.

That said, I once was served half-frozen sushi sashimi and I have never gotten sick from eating sushi here.

I'm more concerned about getting worms from my dog than from eating sushi.

I've been eating Sushi in Beijing for years, without problem.

Then my friend from the UK comes over and gets sick on the first day.

That's what happens when you have no immune system whatsoever.

As with anything, a bit of alcohol helps, just don't drive afterwards.
