An all expenses paid trip to a fancy KTV including top floor services would be a nice memory of China. Two chicks and a camcorder and the guy will have something to tell (show?) his grandkids one day.

Anything traditionally Chinese, even though odds are he/she already has enough vases/pearls/silk robes to open a shop. And anyway, leaving China might be a good enough gift.
If the person has been in China for a long time, they've surely bought all the kitch Chinese items that they'd want, vases, calligraphy, paper cuttings, chopsticks, etc. Any of that more traditional stuff is probably sitting in drawers piled high by now. Best thing I ever got from my staff when leaving a country was a good quality engraved Parker pen, which even today I use daily at my desk 8 years later and think of them, and it was perfect since it fit well into my pocket, and didnt require any thought for how the hell to pack that damn going away gift! The other thing I was given when leaving China before was a copy of the One Night in Beijing photo journal, I think done by the same folks putting out the Immersion Guide series. Staff inscribed the inner cover, and it's a great memory of time here, without the usual kitch of other gifts, or standard photo tour books. Plus, and importantly for someone leaving and packing up, like the pen, it's not breakable!

Anything traditionally Chinese. A vase, a set of traditional clothing, his own Chinese Child labourer.
Something that he can look at and remember all the good times he had.

if he is interested in the Chinese characters there are some pretty cool drawing sets with DVD video instructions to make ur own Hanzi posters.
