I'm probably going to buy an iPhone in the near future and I want the unlocked HK-version.
How do I know it's a HK-version and not the US-version they are selling me? Is there any way to check by the serial number or are there any other tricks?

You can check if it's really open or just cracked by entering the serial number (you find it under "Settings->General->About") here: http://support.apple.com/kb/HT1937.
Also, the first 5 numbers tell you something about where and when it has been produced - i.e. 86830= produced in China (86) in 2008, week 30.

the best test is to stick your china mobile SIM card in it. It should work right out of the box without need for unlocking or SIM gizmos.
if it has an application called "cydia" or "installer" then you know it's not a genuine unlocked one from HK

The web link (as suggested by coeurdelion above) also denotes the specific model numbers issued for each country. The iphone from HK is listed as model number MB500ZP. I confirmed this with my HK iphone (Settings->General->About)and they are the same.

If the phone has 2.2.1 firmware AND the baseband is also higher than 2.30.03 it can't be software unlocked. Therefore, if it works with non-native SIM-card with these conditions it is officially unlocked HK phone
