There's a new operation in town that puts together adventure hikes around the outskirts of Beijing, like in the mountains of Miyun. Their website has some stuff about "adventure" hikes, so there might be some rappelling or climbing involved too. They require groups of at least 4 people, however. They've just started running trips, but the seem pretty solid.
