Eggs - expiry dates - are they really all off??
Hello,
Excuse me if I am being a dum dum, but I've been in Beijing now for a month and shopping in the supermarkets lots. The problem I keep encountering is that when I go to buy eggs, their expiry date is always out of date. I am yet to see what would appear to be a fresh egg. Is anyone else aware of this or am I just having bad luck?
I've been in little shops, big supermarkets, wal-mart, that posh place over by CCTV tower yet they are all stamped with dates in the past. Errmmm. Seems to be a common thing with a lot of foods here but eggs is the one thing that really worries me being out of date.
What do I have to do to find an egg that isn't off?

The dates you are seeing are the production dates, when they were either hatched or delivered to the shop, not the expiry date.

Ah ha! Thank you. See... I had thought that might be the case but then my teacher told me the dates were expiry dates. I very much hope they are production dates, though have seen some recently dating back to 2009. Do Chinese eggs never have a best before/expiry date then?

From some egg site.
A very fresh egg will immediately sink to the bottom and lie flat on its side. This is because the air cell within the egg is very small. The egg should also feel quite heavy.
As the egg starts to lose its freshness and more air enters the egg, it will begin to float and stand upright. The smaller end will lie on the bottom of the bowl, whilst the broader end will point towards the surface. The egg will still be good enough to consume, however, if the egg fully floats in the water and does not touch the bottom of the bowl at all, it should be discarded, as it will most likely be bad.
I heard the same info from a chef mate but couldn't remember the specifics of it. I don't trust expiry dates here.
Sometimes the same is different, but mostly, it's the same.

Classic noob error!
I believe most Chinese food products list the production date and then the length of time you should keep the item. Some list summer and winter times. So in summer you can keep the item for 30 days, in winter 40.
保质期 is the length of time you are recommended to keep the item. Eggs have a recommended life of 45 days in China. Personally I would not eat a 45-day-old egg!

If you're worried about whether an egg is good or not, put it in a bowl/pot of water.
If it sinks, you're ok. If it floats don't crack it, chuck it.

That's kind of scary... really pushing the limits there...
A refrigerated egg can last a month and half or so... sometimes more.
Only once in my life have I cracked open a bad egg, and that experience put me off eggs for a few months, the smell is unbelievable.

Shake the egg to judge whether the egg is a bad egg. The bad egg is easy to shake, you can feel the terrible shake inside the egg.
