A bottle of 2 years old icewine.Is it still drinkable?

I have a bottle of icewine,a little gift from a friend two years ago. Actually it is product of children's camp in Canadian wine village: Kids are taught to fill wine into bottle, then to seal it and tag it. Then the little child brought it to me proudly from ten thousands kilometers away. So I am afraid the bottle is not so airproof as serious product. It has stayed in my cupbroad until yesterday, when I was going to cook chicken but short of cook wine. I seasoned chicken with the 2 years old icewine, and tasted it a bit. The wine turns out taste fine. Could it be still drinkable?

Yeah,it sounds a silly question. But when i read poor CZ's experience "Does white wine give you diarrhoea?", I think i'd better ask you, especially Canadians here Tongue

AS I recall ice wine has a high sugar content, as long as the temp has been stable, and not to high plus kept out of the sunlight should be fine. Excepting the risk of oxidation and corkage!

First time I hear people cook chook with icewine...maybe not a bad idea actually...
Normally we drink icewine with desserts and it doesn't have bubbles.

2 years is okay as long as you have been keeping it in the right place...

i just noticed that i had ran out of cooking wine(normally it should be Chinese rice wine)before cooking, and i didn't like to be bothered to buy one bottle in supermarket at dinner time Plain Face The only wine in my home was this bottle of icewine.... It is not a bad idea to try new ingredient which is never mentioned in recipe.

A top ice wine can be kept for anything up to about 100 years. Average ice wine will be fine for at least 10 years.

As mentioned above it is due to the high sugar levels and also high acidity the wine will keep for a long period of time. You could also leave a bottle open and come back to it a couple of days latter and it should still be fine.

There are various problems wine can have the most common being 'corked'. This occures when a bacteria present in some cork comes in to contact with the wine and changes the flavour, it will smell musty and taste fury or sour.

Wine that has been aged too long or has been left open and in contact with the air will turn to vinegar and is a usefull cooking aid but shouldn't make you ill.

Also if the cork has dried out, the wine can oxidise which gives it a slight sherry like and burning taste.

Wine is so complicated, beer is much easier to deal with! I have a bottle of red wine Jenny Lou's gave me for free a year ago, I have not opened it, just kept in my fridge all of this time, is the fridge a good place to have kept it or should I have put it somewhere else?

In summer, if I open a bottle of red and can't finish it, then I will put it in the fridge...the next day, I'll microwave it before drinking...

The fidge is a fine place to store wine for a day or two. For long periods of time, however, it is not a great place to store wine for various reasons. Firstly it is too cold, wine should be stored around 11 degrees C. Secondly there are alot of vibrations in a fridge which can upset the wine. Lastly fridges have a tendancy to dry the cork out leading to the oxidization of the wine.

Good places to store wine should be somewhere dark with a constant temperature and humidity, the kitchen in general is not a good place to store wine as the temperature fluctuates too much while cooking. Wine should always (with the exeption of Tokaj and some congacs) be stored on its side so the liquid remains in contact with the cork. This helps to prevent the cork from drying out. Of course if it is a screw cap bottle this is no longer important.

re the microwave,

Once I put the bottle into the fridge and the next time I get it out, it will be freezing cold...I can't just leave it out for 3 hours and wait until it is room temperature...so I microwave it for 15 seconds and then it will be nice and warm to drink...and it only takes 15 seconds!
