The labor bureau is one option, but you need to be able t speak Chinese, and of course to have been legally employed here, with all the correct documentation.
Another option is talking directly to a lawyer, if the situation warrants it.

The truth of the matter is that you have to weigh your legal costs against the likelihood of getting compensation that exceeds those costs. Even in the West, that is very unlikely unless you have been mentally or physically abused in some demonstrable way and have witnesses who will testify.
In general, firing people is an employers right. You have to have proof that what they did was not within their rights. Usually, these things are pretty fuzzy and you are best to move on.

Umm, not a fact, actually, just not easy.
But the more foreigners go against the trend of just accepting the crappy treatment they get at many schools and companies, and actually start doing something about it, the easy it will become for everyone.
