the best roasted asparagus
Ingredients
* 2lbs. Fresh asparagus
* 4T Extra virgin olive oil
* All purpose seasoning to taste
* Italian blend seasoning to taste
* Kosher salt to taste
* Fresh ground black pepper to taste
Method
Preheat oven to 425°.
Note: You will notice that the recipe calls for four seasoning types. The idea is to use a little of each in order to obtain your desired flavor. Remember that the flavor of the asparagus should be at the forefront.
Grab an asparagus stalk by each end and bend until it breaks.
Where is breaks is the point where the rest should be cut.
Don’t discard the bottoms. They can be used in stocks and soups.
Lay the asparagus out on a sheet pan making only one layer.
Distribute the olive oil and the seasonings.
Toss to combine, and then lay flat so that the asparagus makes only one layer.
Roast for 8-10 minutes.
Note: Roast only until the middle of the stalk just barely gives when pinched.
Switch the oven to the broiler, and set on high.
Broil until the tips are crispy.
Serve hot along the side of your favorite entrée, or by themselves.
