I wanted to make the restaurant’s barbecued pork ribs. They are lacquered in a mixture of palm syrup and fish sauce, and are vaguely Malay in aspect and flavor, sweet and fatty with a lingering pong of fishiness, a salty thrum below their caramelized crust.
