Union gives you a wet napkin to wipe your hands afterward in you case you use your hands to eat. I prefer to use fork and knife, but to each his/her own.

This place can get pretty busy for dinner, so either make a reservation, if they let you, or be prepared to wait a bit at the bar, if there's room there.
