Who serves red wine chilled or cold ? Where are you from ? That is not a Beijing thing, that is anyone who enjoys "good" wine thing. Obviously you do not drink wine often... HAHAHA really this place is one of the good restaurants worth trying!

The common (AND WRONG) perception is that red wine is to be served at room temperature. Wine should be stored well and served at the proper temperature. Even top places in BJ like M seem not to understand this (not to mention this poster).

Obviously sticking a red wine into a cooling bucket isn't optimal, BUT it brings the temperature down to a proper serving temp. If the room is 20 degrees then your red wine will not be served at a good temperature.

Each grape variety is slightly different. So, this guy is not an idiot, he is complaining about something that nearly every place in BJ needs to improve upon.

Elsewhere in Asia, top restaurants will have a proper sommelier who pay more attention to this. BJ needs to improve on this.

Try this at home. Take a burgundy or a rioja and try at a warmer room temp and then a couple degrees under. Big difference for decent wines.

Red wine is not to be served at room temperature. Generally 55 to 57 degrees or so. You don't serve it chilled either but I used to bocket to lower its temperature.
It is quite obvious that you know nothing about wine. I have actually traveled the world and visited wine makers all over. My 1000-bottle wine cellar is probably worth more than your apartment (if you have one).

Hey, this is a pretty good website, with lots of great info on the do's and don'ts of wine.

For example, from the Wine Basics Intro Page:

"Wine Basics Rule #14: Do not brag about your expensive 1,000 bottle wine cellar, or else you'll look like an asshat who's too old to carry around a messenger bag with a silly cellphone holder tacked to it."

you must be an idiot, Wine are never supposed to be served at room temperature or warm, thats why they're kept in a CELLAR.
Also i'm guessing you never heard of Canadian ICE Wine before? which is suppose to be served slightly chilled.
