Among the many great culinary offerings of China, the baozi is one of the least remarkable: a big thick bun, the same dubious “meat” filling. This recipe has remained unchanged for centuries, with most chefs mistaking a lack of innovation for venerable tradition. Now someone’s taken a look at the tired and homogenous steamed bun and seen an opportunity to innovate.

The result is fast food with “slow cooking” quality, starting with the filling. Say goodbye to a smudge of brown meat like a rusty sheriff’s badge in the middle, and “wei” to a saucy center tomato filled with tomato, herbs, spice, cheese and meat. The bread itself is significantly better than the usual boring bun: Fluffy, light and not too doughy. Arguably, these aren’t even pizza plus baozi, they’re a step ahead in the whole dynamic (if I had to complain, perhaps use more cheese inside: it tends to get overwhelmed by the hot sauce).

The current digs in SOHO aren’t really for eating in, but Baozza does delivery. It’s one of the best lunch deals around. Two or three buns, plus a choice of soup and a salad, plus dip, for around 30-40 kuai. The variety is decent, though more filling types would be welcome. Customer service is top notch: they seem to value feedback, both good and bad. But when it comes to taste and quality ingredients, these guys "bao" to no one.
