Superb Guizhou food – Beijing’s best. Nowhere else will you find such authentic, country-style stir-fries, spicy and mouth-puckering sour. Anything with zaola peppers is highly recommended, as is the juanfen, a tangy cold appetizer of wide rice noodles and pickled radish, and xiaomi zha, a sweet millet cake with peanuts. Also don’t miss regional vegetables like juecai (fern) and zhe’ergen (a white root with a mildly fishy scent), both of which can be cooked alone or with bacon.
