Beer and food pairing is all about experimentation. Are there some generally recognized guidelines to push you in the right direction? Certainly. They generally are referred to as the four C’s. Compare, Contrast, Cut, Create. Compare refers to using similar flavor profiles between the beer and food pairing. Contrast implies putting divergent flavors together in a pairing. Cut, our third C, denotes pairing a beer with a particular flavor or mouthfeel that will then change the feeling of the entire dish. Finally, Create – our fourth C – means to just get wild with it and see what happens. That, our dear friends, is the currently accepted theory on beer and food pairing. 


We at Great Leap Brewing have engaged in a few beer and food pairing partnerships with other restaurants in the past, and we are excited to announce that our next one will be on Saturday, October 20th with Sanlitun institution Mosto. Having been open for 10 years now, Mosto is most famous for their high-class take on South American cuisine. Recently, a new chef has moved into the kitchen. Richard CaBa, who hails from Colombia and is an expert in South American cuisine, is bringing in recipes rarely seen here in the capital. Having never worked with South American cuisine before – and knowing the dedication to food quality that Mosto has become renowned for – we thought we’d take a stab at the fourth C and come up with something truly unique and special for you all. Check out what we have in store for you: 


Patacon Paisa – Fried green banana, beef, beans, poached egg, avocado, bacon, and Colombian sauce. Beer pairing – Diplomatic Mango Tropical Stout. 


Pork Belly – Crispy pork belly, sweet purple mashed potatoes, carrots, spinach, and housemade BBQ beer sauce. Beer pairing – Three Door Tripel. 


Mosto’s Crumble Apple Pie – Apple pie crumble, vanilla ice cream, and cinnamon crème anglaise. Beer pairing – Liu the Brave Stout. 


How delicious does all of that look? We’ve incorporated all four of our C’s into this meal, so this is something you all definitely don’t want to miss. On top of all these delicious food and beer pairings, every guest will also be provided with a welcome drink (Great Leap’s Honey Ma Gold), and if you want to have your beer topped up once, twice, or three times, that is all good with us. Beer will be flowing throughout the whole meal. 


Great Leap Brewing and Mosto’s Brew Brunch will take place at Mosto from 11am to 3pm on Saturday, October 20th. Tickets are only 248rmb per person. Reservations are not required for attendance, but they are preferred and walk-ins will only be taken if reservations don’t fill up.
