This season, The Lobby presents the prime beef flavours of South America, enabling guests to sample and savour the Tastes of Uruguay. Uruguay is known as a Paradise of Natural Pastures, where the sun shines and sub-tropical rains ensure the landscape remains green and fertile. Uruguayan beef is a natural gift of this beautiful land. Guests are invited to embark on an extraordinary culinary journey inspired by Uruguayan beef from the grasslands of South America.

To celebrate spring, Alessandro Fontanesi, Executive Chef of The Peninsula Beijing has partnered with the Uruguayan National Meat Association and led a team of chefs to select the ultimate cuts of prime South American beef. The result is a groundbreaking new menu at The Lobby introducing diners to the premium quality and tender succulence of Uruguayan beef, which is widely considered among the best in the world.


A Global Culinary Journey with Uruguayan Inspirations
Chivito
A delightful fusion of Uruguayan beef slices and ham, layered with a perfectly fried runny egg. Fresh tomatoes, crisp lettuce and melted cheese are added, and the dish is paired with deliciously crunchy sweet potato strips. Each juicy bite harmonises the layered beef flavours and alluring egg aromas, paying homage to Uruguayan culinary tradition.


Gaucho Burger
A burger lover's delight. The hand-crafted Uruguayan beef patty is spiced with an herb chili sauce, and served with rich smoky cheese and crispy bacon strips. The tangy bitterness of arugula is balanced by the sweet-and-sour taste of fresh tomato, and the satisfying crispy crunch of potato fries.


Milanesa
Milanesa, a beloved traditional dish in Uruguay, celebrates simplicity and flavour. The hand-selected steak is fried in breadcrumbs until golden perfection, creating a crispy exterior that locks in the meat’s natural juiciness. A squeeze of fresh lemon brightens the savoury notes, while a side of crisp vegetable salad adds a refreshing contrast.


Beef Short Ribs
Boned short ribs are slow-cooked for four hours at a low temperature to lock in the natural juices and nutrients. The tender and aromatic meat is placed amid creamy black truffle mashed potatoes and drizzled with delicious beef-onion gravy and decorated with mini carrots and asparagus.
