Here comes good news for the gourmet aficionados of Beijing. During upcoming Apr. 10 to Apr.13, the award-winning fine dining Italian restaurant Cépe of The Ritz-Carlton Beijing, Financial Street, will invite talented Michelin Chef Roy Salomon Caceres being guest chef for 4 days and debut his new creations with passion and appreciation to the respected guests of Beijing. 


Cépe is one of Beijing’s finest dining rooms featuring haute Italian style cuisine. Wine aficionados will delight in an extensive wine menu featuring 200 wines. This 70‐seat dining room also features a private dining room for 10 (Porcino) and an intimate chef’s table (Bottega). It’s always a rewarding choice for business success celebration and leisure gathering with its supremely elegant setting and romantic ambiance.


Born in Bogota, Columbia in 1977 and moved to Rome with families at age of 16, Roy Salomon Caceres was always dreaming of playing for NBA during his boyhood. After being inspired by his grandpa's home cooking and began a hard apprenticeship as a dishwasher in the restaurants of Roma, he was gradually attracted by the chef´s stunning cuisine, and desired to understand the secrets of culinary. Since then, he never stopped exploration of the culinary arts. He worked in several emblematic Italian restaurants and hotels including LocandaSolarola in Castel Guelfo, where he was Sous Chef when the restaurant obtained its first Micheline Star in 2002. In 2010, Roy became Executive Chef of the brigade of Pipero Albano Laziale. In 2011, he opened the Metamorfosi as Executive Chef, and after half a year he gained the Micheline Star for this restaurant, and make it a reflection of his own style and concept.


Today Roy Salomon Caceres is a prominent member of Italian gourmet cuisine. His dishes are often inspired by memories of moments in life which combined his roots in Columbia and artistic enthusiasm from Italy, with the breath-taking beautiful presentation. And his objective is to create emotional connection with the people that taste his dishes, evoking their senses in the discovery of the new boundaries of taste.


April 10-13, Michelin Chef Roy Salomon Caceres, partnering with Chef De Cusine of Cépe Mr. Fabio Nompleggio, will debut 3 menus of his new creations with passion and appreciation to the guests of Beijing. Hotel’s Chief Sommelier David Duan will present professional wine pairing for the feast.


During this gourmet festival, lucky Beijing guests could appreciate the signature dishes of famous Rome restaurant Metamorfosi without traveling to Italy. “Rigatoni Pasta, Red Spanish Prawns, Bufallo Mozzarella, Candied Tomato”, “Amberjack, Colombian “Ceviche”, Litchis Foam, Celery”, are both recognizable combinations of Roy’s style.Mouth-watering Appetizer “Raw Tuna And Herbs wrapped In Chard Leaves” and picturesque dessert “Yuzu Citrus, Fennel Pollen, Dill, Spring Flower” deliver the refreshing breath of spring to your tongue.
