With Japanese pop music on the speakers, simple decor and plainly dressed wait staff, Elvis (the name is an English transliteration of this chain’s flagship branch in Tokyo), may look like fast food; that is, until you taste the toothsome noodles bathing in complex broth made in three regional styles – Tokyo (soy sauce), Hokkaido (miso), and Kyushu (pork) – to complement the superbly slinky homemade ramen.
Standard side dishes are also on offer, like gyoza, Japanese fried chicken, and charbroiled whole squid. We especially recommend the Kyushu grand rib soup ramen - a large bowl of egg noodles and toppings immersed in a rich opaque broth. Wash it all down with an ice-filled glass of shochu with lemon (RMB 35).
