Good, but it helps to speak Chinese

I've used Eric Paris for a number of years and I've always found them to be very professional. I've never had a bad haircut there. Two caveats. First, in a town where you can get a haircut for 15 RMB, they are very expensive. Second, while part of that charge is because many of the staff can speak/understand English, it really helps if you can communicate what you want in Chinese. Overall, a good experience. The place seems very clean and the staff are friendly.
