One Meal is a roomy 800sqm in the basement of the Yintai Center with a huge open kitchen that gives a kinetic view of the many cooks working away on Beijing classics.

The signature dish is yutou paobing (鱼头泡饼), a huge and sumptuous fish head stew (RMB 108 per 500g) with wheat pancakes on the side to dip into the broth. There are also plenty of other Beijing staples that may be more familiar, such as Beijing duck (RMB 138 for half, RMB 198 for a whole), dumplings, zhajiangmian, stir-fried egg with tomato, sliced beef in chili oil, and the ubiquitous gongbao jiding, as well as jars of cooked seafood (RMB 60-100) with chili to go.
