Fly Pizza Rides the Korean Pop Culture Craze

In the run-up to the Beijinger's 2015 Pizza Cup, we are profiling some of the best pies in Beijing so that you, our faithful readers, can try as many as possible before we ask you to make your choice for the best.

Today we tell you about the pizzas on offer at Hoodadak Chicken and Fly Pizza, who for the second year running will be selling their wares at our two-day pizza festival October 17-18 at Galaxy Soho. Taek Chong, the owner, tells us about their Korean take on pizza:

How long have you plied the trade?
I have been devoting myself to running this restaurant since 2009.

What's your style/pizza philosophy?
Our philosophy is “More taste more health,” so we insist on making Korean handmade pizza.

In a market crowded with over 100 different pizza shops, what do you do to stand out?
We are trying to create a new flavor of pizza that surpasses the basics of traditional options. As a result, our most popular pizza is our exclusive sweet potato pizza.

Thick vs. Thin: What's your take?
We supply both thin and thick style. To further satisfy customers, we also offer a medium options that is half thin and half of thick.
 
What's the secret to your sauce?
All the sauce and raw goods are from South Korea. And the sauce is homemade.

What kind(s) of cheese do you use and why?
We use mozzarella semi-hard cheese to make the pizza taste soft and smell good.
