CNY Bartender: Spill This Tea (Cocktail) From Theatre Tea

You know how they say “spill the tea” whenever it’s time for gossip? Well, I’m not into tea, but I DO like a good tea-infused cocktail.

One of my favorite places for afternoon tea that’s relaxing and lets me feel moderately fancy is Theatre Tea. They’ve got locations all over the city and makes so much more than just tea and good desserts.

Theatre has come up with a collection of tea-infused cocktails that are inspired by artists and classical works of art. Sounds bougie? Perhaps a bit, but they’re wonderfully well thought out if you’re looking to have a cocktail to sip.

Inspired by French art critic Félix Fénéon who coined the term Neo-Impressionism in 1886, this gin based cocktail is a great one to know for fancy dinner parties at home.

M. Félix Fénéon  (Rooibos Gin Cocktail)

Ingredients

45ml Rooibos-infused gin (see Method)
15ml Passion fruit syrup 15ml
15ml Fresh lime juice 15ml
Soda water to top
Ice cube

Garnish: Orange peel, Rosemary

Method

1. First, make the Rooibos-infused Gin by mixing 10g of Rooibos tea with 350ml of gin together in a glass container and put it in fridge for one night to infuse.

2. Take the gin out the next day and remove the tea from the mix. You can keep the infused gin in the refrigerator for a week or two.

3. Now on to the drink. Add the lime juice and passion fruit syrup with the gin into a cocktail shaker.

4. Shake for 20 to 30 seconds or until the shaker becomes frosted, then strain it into a whiskey glass with a big ice cube and top off with soda water.

5. Garnish with the orange peel and rosemary, then enjoy.
