5 Easter Cocktail Recipes To Resurrect, and Destroy, Your Childhood Memories

When we set out to put together a roundup of Easter festivities in Beijing, we quickly realized that the holiday is largely for families, and specifically, kids. So if you count yourself among the familied masses, then we highly suggest you check out our list of events right here. For the rest of us, however, there isn’t a whole hell of a lot going on. So when the city doesn’t provide, the Beijinger takes on the admirable task of creating our own themed fun. Thus, we present five Easter cocktails to celebrate the holiday like a goddamn adult.

Hollow Chocolate Bunny Cocktail Glass

Anyone who grew up celebrating Easter will have fond memories of savagely biting the head and ears off of a hollow chocolate bunny. As a kid, it’s a bummer to find out that there’s less sugar to be devoured. But as an adult, that bunny just became the perfect cocktail glass. Grab two fresh strawberries and muddle them in a mixing tin. Then throw together 1 1/2 ounce vanilla vodka, 1/2 ounce Baileys Irish cream, 1/4 ounce simple syrup, and 1/2 ounce heavy cream. Shake that shit up and pour it into your bunny’s body. Pro tip: Save some of the ear chocolate, shave a bit off, and garnish the top.

Easter Egg Shots

Conversely, you can opt for a hollow chocolate egg and get similar results. For this one, combine 1 ounce Irish cream, 1 ounce white chocolate liqueur, and 1 ounce butterscotch Schnapps. Then simply mix well, cut (or bite, duh) the top off of a chocolate egg, and pour inside. Tipsy Bartender also calls for artificial hay in this recipe, but we’re going to go ahead and say it’s not entirely necessary.

Easter Peeps Gin Rickey

If you thought a humanoid rabbit hiding eggs for children under the cover of darkness was mortifying, check out this Easter Peeps Gin Rickey. We, for one, will not be indulging, but if you would like to, you’ll be happy to know that Peeps can be purchased on Taobao, simply search “Easter Peeps” in English. Then mix up a classic gin rickey – 2 ounces gin, 1/2 ounce lime juice, club soda to top, and a lime wheel garnish – plop some Peeps on top, and hallelujah! It’s blasphemy in a glass (or glassphemy, if you will)!

What's Up Doc

Okay, here’s one that doesn’t contain enough sugar to raise a messiah from the dead. It’s the What’s Up Doc, because you know, rascally rabbits. Mix 2 ounces vodka with 3/4 ounce carrot juice, 1/2 ounce lime juice, and 1/4 ounce simple syrup. Strain it into a highball glass and top with ginger beer, plus a cute twisty carrot peel garnish.

The Cottontail Martini

And last, but certainly not least, a slightly more ambitious adventure in Easter-themed cocktails, the Cottontail Martini. You’ll need 1 1/2 ounces whipped vodka (or vanilla), 1 1/2 ounces coconut rum, 2 ounces half and half, 1/2 ounce cream of coconut, and pineapple juice, with honey, chopped sweetened coconut, and marshmallow to garnish. First, grab two shallow dishes. Add a teaspoon of honey to one, and the sweetened coconut to the other. Then, coat the rim of your martini glass in the honey, followed by the coconut, and set aside. Fill a cocktail shaker with ice and add the vodka, rum, half and half, cream of coconut, and pineapple juice. Shake it up as vigorously as a rabbit doing that thing rabbits are known for doing, strain into the glass, and enjoy!
