Cocktail of the Month: Gin Fizz
The glacial element is all that separates the Gin Fizz from its better-known relation, the Tom Collins. But as we proceed headlong into the stifling Beijing summer, ice is unquestionably one of the more important ingredients of July’s Drink of the Month.
First referenced in the 1862 edition of How to Mix Drinks by Jerry Thomas, the concoction was an instant hit. Early stockists were forced to hire a posse of bartenders to pre-prepare the drink, such was the demand.
There are several derivatives but each riffs on the original recipe. Silver, Golden and Royal Fizzes all offer subtle variations on the Gin Fizz, which traditionally consists of genever gin, fresh lemon juice, sugar, and soda water to provide a crisp, refreshing riposte to a balmy evening.

Atmosphere
Head bartender Henning Neufeld recently told us that this is his current favorite tipple, so his version (RMB 85) would be a good place to start for the uninitiated.
