Captivating Cantonese: Simon Wu Takes Over the Kitchen at Huang Ting

Located in the bowels of the grand Peninsula Hotel, Huang Ting is a perennial favorite among Cantonese food fans. With the arrival of new head chef Simon Wu, the kitchen has taken on a new lease of life. A Hong Kong native, Chef Wu has more than 30 years of experience cooking in high-end kitchens around Hong Kong and Beijing, including at the Hong Kong Jockey Club. His food is traditional yet light, with a focus on health, as evidenced by the use of just egg white in the grease-less fried rice. That being said, our favorite dish was the juicy Cantonese-style roast duck, a refreshing change from the standard Peking duck.
