Burger Brief takes a look at some of the top seeds in the Beijinger 2015 Burger Cup. This time around, we talk to Christoph Zoller of The Cut to see what pushed their burger into the top 64 in the pre-tournament seedings.

Tell us about your signature burger. What makes it the best burger in Beijing?
The special thing about our burger is that we only use fresh and high quality products. For example:  a homemade burger bun with fresh thyme, homemade tartar sauce, a 100 percent Wagyu beef patty, fresh Boston lobster, homemade beer battered onion rings.  

What does the burger come with?
We serve the burger with our signature fries. These unique fries are beer battered and seasoned with a secret spice mix  

What drink from your menu goes best with the burger?
Montes, Cabernet Sauvignon, Limited Edition from Chile, RMB 100 per glass.

What other burgers do you have on the menu?
At lunch we serve our Cut XXXL Burger.

What was the best burger you’ve ever had, in Beijing or otherwise?
The absolute best burger I’ve ever had was in a restaurant in Switzerland. It was special because of everything in it. The beef patty was sourced from local cattle, it was topped with  mountain cheese from a local producer, and it also featured a rough onion sauce and a crispy fresh bun from the baker around the corner. This burger was awesome and the price was very okay, because nothing was imported.
