Burger Brief: Union Bar and Grille's Double Cheese Burger

Burger Brief takes a look at some of the contestants in the Beijinger's 2015 Burger Cup. Now down to the wire with the Elite Eight, we talk to Stanley Hsieh of Union Bar and Girlle, whose venue is still in contention for the honor of Beijing's Best Burger.

Name: Stanley Hsieh, chef
Nationality: Taiwanese
Number of years in Beijing:
Venue: Union Bar and Grille
Name of signature burger: Double Cheese Burger

Tell us about your signature burger. What makes it the best burger in Beijing?
The beef we use for our burger patty is imported from Australia. It is grain-fed and wet aged for at least 21 days. We have 480 gram patties and we char grill them to the exactly doneness that customers like. We then serve them with your choice of cheddar, swiss or blue cheese.

What does the burger come with?
The burger comes with fries and coleslaw. The we use thin cut fries, because they are crispier and stay crispy while you eat them. The coleslaw is freshly made every day, and its sweet, sour, and fruity taste balances the grease from the burger and fries.

What drink from your menu goes best with this burger?
Guinness draft beer. It's cool, rich, and smooth. Having a pint of Guinness with our double cheese burger completes the taste experience.

What other burgers do you have on the menu?
We have many sandwich choices on our menu. Our BBQ Pulled Pork Sandwich has tender barbecue pulled pork and caramelized onion in a toasted bun with barbecue sauce. Then there's our Spicy Char Grilled Chicken Sandwich, which is made with a seasoned char grilled chicken breast, then glazed with spicy chipotle chili sauce. We also have a New York Reuben, which features corned beef, swiss cheese, sauerkraut, and thousand island dressing on grilled deli rye. The Classic Turkey Reuben comes with turkey meat, swiss cheese, sauerkraut, thousand island dressing on grilled deli rye. We have those choices and many more.

Aside from your own restaurant's burger, what was the best burger you’ve ever had?
I love the burgers at Modo Urban Deli, which are juicy and very tasty.
