Rise and Shine: Flour-Free, Sugar-Free Pancake Recipes

Given the title, you may be thinking, "What's the point, then?" But each of these recipes is delicious and easy to follow. They offer a healthier way to start a winter's day with a little hot sweetness, and without free-sugars or flour.

Couldn't be easier than this! The recipe also includes a ton of suggestions to pimp yo' pancake, and make something a little fancier. Be warned, these should be cooked on a lower heat, and flipped more gently than their glutinous cousins. If you cook these at a higher temperature and flip them quickly they will break up in the pan.
 

Banana-Oat Pancakes
This recipe instructs you to blend the mixture in a food processor, and while you absolutely can do that to make a smoother batter, I've also made these without the baking powder, and without blending, and they turn out great.
 

Protein Pancakes
There are lots of complicated protein pancake recipes out there - I love this one because it's so simple. I find protein powder completely unpalatable in a shake; this is the only way I can eat it. Be very careful not to overcook these. Protein powder takes on a squeaky quality on the teeth when it's over-fried. If that hasn't put you off, and please don't let it, try these with two tbsp of 100 percent cocoa powder mixed into the batter for a guilt-free chocolate fix.
