Spice Up Your Life: Billy's Brings Soothing Relief With Durian Cheesecake and Spicy Mojitos

People of the world! Every boy and every girl: In the lead up to our second annual Hot & Spicy Festival on Apr 20-21, we’re Spicing Up Our Lives with a few of the vendors to see what searing treats they'll be doling out at the rapidly approaching fine spring weekend. This time: Billy, founder of Billy's Fish & Chips.

A fish and chips establishment that also serves spicy mojitos and durian cheesecake? Yep, you heard us right, Billy of Billy's Fish & Chips does not give one single F when it comes to what should and shouldn't be thrown together on a menu, and quite frankly, we're fans of his flagrant burning of the gustatory rulebook.

However, that's not the only thing that's burning: your stomach will likely be on fire too from all the spice you've been eating this weekend. The cure? You guessed it, a slice of durian cheesecake washed down with a refreshing Yunnan pepper mojito. We won't judge, and we know Billy definitely won't judge.

Ahead of the festival, the man himself tells us about some of his spiciest experiences.

What do you enjoy the most at last year's Hot & Spicy Festival?
I think the best part was the active atmosphere of the whole festival. There was good music, bands, and DJs. I can proudly say that I think last year's best food was Billy's Fish & Chips, but Q Mex also brought some great dishes!

In your opinion, what are the most important elements that help make great spicy food?
Making spicy food requires the best ingredients and authentic chili peppers to match.

Tell us about the spicy drink you will bring to our Hot & Spicy Festival and why we should try it.
Most noteworthy is this year's hot pepper mojito. I use Yunnan chilies that are locally called "Yunnan devil pepper." Together with imported mango and rum, these are the best ingredients for a refreshing but hot mojito.

What spicy food would go best with this drink?
Mango mojitos go well with any food!

When did you love of spicy food begin?
I have been fond of spicy food since childhood. My hometown is famous for chili peppers.

In your opinion, which country in the world has the best spicy food and why?
I prefer Thai spicy food. It has less oil than other cuisines and is much healthier.

What is the spiciest thing you have ever eaten? Would you recommend other people to eat it?
Probably insanely hot chicken wings. I only ate two and I don't recommend them. It's really unbearable.

What are you looking forward to at this year's Hot & Spicy Festival?
I'm definitely looking forward to revealing the durian cheesecake. The Thai Cat Mountain King Durian and cheese baked together will make for a great soothing combination for festival-goers who will eat a lot of spicy food.

Is there anything else you would like to tell our readers?
Don't worry about eating too much spicy food! Just come and get some durian cheesecake afterward and you will feel better immediately!
